The one worth buying first

A digital probe thermometer. Almost everything that goes wrong in cooking is a temperature you could not see. Chicken is done at 165 °F and dry at 180 °F, and the gap between them is about four minutes — which is why air fryer fried chicken is written around a number rather than a time. A custard sets at 170 °F and scrambles a few degrees later, which is the whole difficulty of eggnog. An instant-read probe costs less than one bad roast.

Pans

One heavy skillet, cast iron or thick stainless. Weight is the point: a thin pan drops in temperature the moment food hits it, and food that lands in a cooling pan steams instead of browning. That is the difference between gray mushrooms and browned ones in mushroom sauce for steak, and it is why potato pancakes need a pan that stays hot through four batches.

A rimmed sheet pan, ideally two. Roasting is mostly a question of whether the food has room; crowd it and the water it gives off has nowhere to go. Two pans and one layer beats one pan and two layers every time, as in roasted sweet potato bites.

Measuring

A scale that reads to one gram. A cup of flour can vary by 20% depending on who scooped it, which is why a cookie recipe works for one person and spreads flat for the next. Recipes here give cups alongside grams; the grams are the ones that behave — noticeably so in oatmeal chocolate chip cookies.

Appliances, only if you will use them

An air fryer is a small convection oven that preheats in three minutes, and that speed is the reason it gets used on a weeknight. A slow cooker does one thing well — long, low, unattended — which is what slow cooker baby potatoes rely on. A pressure cooker earns its place if you cook tough cuts often; beef stew goes from three hours to about one. A blender matters for drinks and little else, but for frozen lemonade nothing else will do.

What you can skip

Garlic presses, avocado tools, strawberry hullers, egg separators, and anything that does one job a knife already does. A sharp knife, a cutting board, and a bench scraper to move what you have chopped will outwork all of them.
