Instructions
- Make the Crust: Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter until well mixed. Press the mixture evenly into the bottom of a 9-inch springform pan or pie dish. Bake for 8-10 minutes, then set aside to cool completely.
- Prepare the Lime Mousse Filling: In a small bowl, dissolve the gelatin (or agar-agar) in warm water and let it bloom for a few minutes. In a large mixing bowl, beat the softened cream cheese until smooth and creamy. In a separate bowl, whip the heavy cream with powdered sugar until stiff peaks form. Add fresh lime juice, lime zest, and vanilla extract to the cream cheese and mix until fully combined. Gently fold the whipped cream into the cream cheese mixture, taking care not to deflate it. Microwave the bloomed gelatin for 10-15 seconds or until fully dissolved, then stir it evenly into the mousse mixture.
- Assemble the Cheesecake: Pour the lime mousse filling over the cooled graham cracker crust and smooth the surface with a spatula. Refrigerate the cheesecake for at least 4 hours, preferably overnight, to allow it to set completely.
