- Prepare Chocolate and Flavorings: Place white chocolate chips in a heat-safe bowl. Add lemon extract and yellow food coloring, if using, then set aside.
- Heat Butter and Cream: In a saucepan, heat the unsalted butter and lemon zest over low heat until the butter melts completely. Increase the heat to medium, add the heavy whipping cream, and cook until the mixture just begins to simmer. Immediately remove from heat to avoid boiling.
- Combine Mixture: Pour the hot butter and cream mixture over the white chocolate chips. Allow it to sit for a few seconds to soften the chocolate, then stir gently until the mixture is smooth, creamy, and fully melted together.
- Chill to Set: Cover the bowl and refrigerate the mixture for about 1 hour, or until firm enough to scoop.
- Form Truffles: Using a small spoon or scoop, portion out small amounts of the chilled mixture. Roll each portion into a ball with your hands. Use powdered sugar on your hands or the mixture to prevent sticking if necessary.
- Coat Truffles: Roll each truffle evenly in the powdered sugar to coat the exterior completely, giving a delicate, sweet finish.
- Final Chill: Place the coated truffles back in the refrigerator for at least 30 minutes to allow them to fully set before serving.
