- 1 cup chopped fresh spinach
Seasonings
- 1 teaspoon garlic powder

- 1/4 teaspoon black pepper
Egg Mixture
- 8 large eggs
- 1/2 cup milk (dairy or non-dairy)
- 1 cup shredded cheddar cheese
Optional Garnish
- Chopped green onions or fresh herbs
Instructions
- Preheat and Prepare: Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish to ensure the casserole doesn’t stick during baking.
- Sauté Vegetables: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add diced onion, red and green bell peppers, and chopped zucchini. Cook for 5 to 7 minutes until the vegetables are softened and fragrant.
- Add Spinach and Season: Stir in the chopped fresh spinach and cook for 1 to 2 more minutes until wilted. Season the mixture with garlic powder, salt, and black pepper. Remove the skillet from heat.
- Mix Eggs and Milk: In a large bowl, whisk together 8 large eggs and 1/2 cup milk until smooth and fully combined.
- Combine Ingredients: Fold the cooked vegetable mixture and 1 cup shredded cheddar cheese into the egg mixture, ensuring everything is evenly distributed.
- Assemble Casserole: Pour the combined mixture into the prepared baking dish and spread it out evenly.
- Bake: Place the baking dish in the oven and bake for 30 to 35 minutes, or until the center is set and the top turns lightly golden brown.
- Cool and Garnish: Allow the casserole to cool slightly before slicing. Garnish with chopped green onions or fresh herbs if desired, then serve warm.
Notes
- Prepare the casserole the night before and refrigerate, then bake fresh in the morning for convenience.
- Feel free to swap in any vegetables you have on hand, such as mushrooms, broccoli, or tomatoes, to customize the dish.
