Instructions

  1. Cook the Tortellini: Prepare the cheese tortellini according to the package instructions until al dente. Drain the pasta and briefly rinse under cool water to stop the cooking process. Let it cool completely.
  2. Combine Salad Ingredients: In a large bowl, mix the cooled tortellini with halved cherry tomatoes, fresh mozzarella, and chopped basil leaves.
  3. Prepare the Dressing: In a small bowl, whisk together the extra virgin olive oil, balsamic glaze, red wine vinegar, minced garlic, salt, and black pepper until well combined.
  4. Dress the Salad: Pour the dressing over the tortellini mixture and gently toss to evenly coat all ingredients.
