- 2 tablespoons balsamic glaze
- 1 tablespoon red wine vinegar
- 1 small garlic clove, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Cook the Tortellini: Prepare the cheese tortellini according to the package instructions until al dente. Drain the pasta and briefly rinse under cool water to stop the cooking process. Let it cool completely.
- Combine Salad Ingredients: In a large bowl, mix the cooled tortellini with halved cherry tomatoes, fresh mozzarella, and chopped basil leaves.
- Prepare the Dressing: In a small bowl, whisk together the extra virgin olive oil, balsamic glaze, red wine vinegar, minced garlic, salt, and black pepper until well combined.
- Dress the Salad: Pour the dressing over the tortellini mixture and gently toss to evenly coat all ingredients.
