Dough Mixture
- 1 1/2 cups warm whole milk (105°F), divided
- 1/4 cup granulated sugar
- 2 teaspoons active dry yeast
- 1/2 teaspoon salt
- 5 cups all-purpose flour, divided
- 6 tablespoons salted butter, melted and cooled to room temperature
- 2 large eggs
Instructions
- Activate Yeast: In a small bowl, stir together 1/2 cup of the warm milk, granulated sugar, active dry yeast, and salt. Let the mixture stand for 5 minutes or until it becomes foamy, then stir in 1/2 cup of the all-purpose flour. Set this yeast mixture aside.
- Mix Wet Ingredients: In the bowl of a stand mixer fitted with a dough hook, beat the melted butter, eggs, and remaining 1 cup of warm milk on low speed until well combined.
- Combine Yeast Mixture: Add the prepared yeast mixture to the bowl and continue beating until the mixture is well incorporated.
- Add Flour and Knead Dough: Gradually add the remaining flour to the mixture, continuing to mix until the dough pulls away from the sides of the bowl. Beat on low speed for 5 minutes to knead the dough thoroughly. If the dough feels too sticky, add up to 1/4 cup additional flour, but no more than that.
- First Rise: Lightly spray a large bowl with non-stick spray and place the dough inside. Cover with a clean kitchen towel and let the dough rise in a warm place until it doubles in size, approximately 1 to 2 hours depending on kitchen temperature.
- Rest Dough: Lightly flour a clean countertop and turn out the dough onto it. Divide the dough in half and shape each half into a ball. Cover the balls and let them rest for 10 minutes.
- Prepare for Baking: Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper or grease it with non-stick spray.
- Shape Rolls and Second Rise: Divide the dough into 24 equal pieces (weighing about 2 ounces each if possible). Roll each piece into a smooth ball and place the dough balls side by side on the prepared baking sheet. Cover with a kitchen towel and let them rise until doubled in size, about 30 minutes.
- Bake: Bake the rolls in the preheated oven for 20 minutes or until they are golden brown on top.
- Finish and Serve: Remove the rolls from the oven and immediately brush the tops with melted butter for a soft, shiny finish. Serve warm and enjoy your homemade dinner rolls!
