These Teriyaki Chicken Lettuce Wraps offer a delicious, healthy twist on a classic Asian dish, featuring tender diced chicken cooked in a flavorful homemade teriyaki sauce, served fresh in crisp lettuce leaves. Perfect for a quick weeknight dinner, these wraps are low-carb, gluten-free, and packed with vibrant vegetables and savory-sweet flavors.

Ingredients

Scale

Chicken and Vegetables

  • 1 pound boneless skinless chicken breast, diced
  • 2 tablespoons vegetable oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup diced bell pepper
  • 1/2 cup shredded carrots

Teriyaki Sauce

  • 1/4 cup low sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon hoisin sauce
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon crushed red pepper flakes (optional)

To Serve

  • 8 to 10 large butter or romaine lettuce leaves
  • 2 green onions, sliced
  • 2 tablespoons toasted sesame seeds

Instructions

  1. Cook the Chicken: In a large skillet, heat the vegetable oil over medium-high heat. Add the diced chicken and cook for 5 to 6 minutes until browned and cooked through. Then, remove the chicken from the skillet and set aside.
  2. Sauté the Vegetables: Using the same skillet, sauté the diced onion, minced garlic, diced bell pepper, and shredded carrots for 3 to 4 minutes until the vegetables are tender-crisp and fragrant.
  3. Prepare the Teriyaki Sauce: In a small bowl, whisk together the low sodium soy sauce, honey, rice vinegar, hoisin sauce, grated fresh ginger, and crushed red pepper flakes (if using) until well combined.
  4. Combine Chicken and Sauce: Return the cooked chicken to the skillet and pour the teriyaki sauce over it. Cook for 2 to 3 minutes, stirring frequently, until the sauce thickens and evenly coats the chicken and vegetable mixture.
  5. Assemble the Wraps: Remove the skillet from heat. Spoon the chicken and vegetable mixture into large butter or romaine lettuce leaves. Garnish each wrap with sliced green onions and toasted sesame seeds.
  6. Serve: Serve the teriyaki chicken lettuce wraps immediately for the best texture and flavor.

Notes

  • For extra crunch, add chopped water chestnuts or peanuts to the filling.
  • Butter lettuce leaves work best for easy folding and wrapping.
  • These wraps are perfect for a low-carb or gluten-free meal.
  • Adjust crushed red pepper flakes to control the spiciness level.
