- Prepare the fondant mixture: In a medium bowl, combine the powdered sugar, softened butter, tart cherry juice, vanilla extract, and a pinch of salt. Mix thoroughly until a smooth, thick dough forms. If the mixture feels too sticky, gradually add more powdered sugar until it becomes workable.
- Form the candies: Shape the fondant mixture into small balls or flatten them into discs, then place them on a parchment-lined baking sheet. Freeze for 15 to 20 minutes until the pieces are firm.
- Melt the chocolate coating: While the fondant chills, melt the dark chocolate and optional coconut oil together in a heatproof bowl set over simmering water or microwave in short bursts, stirring frequently until smooth and glossy.
- Dip and garnish: Dip each chilled fondant piece into the melted chocolate, allowing excess chocolate to drip off. Place coated candies back on the parchment. If desired, top each with a small piece of dried tart cherry before the chocolate sets.
