Description

Tart Cherry Fondant Creams are delightful, bite-sized candies featuring a smooth, cherry-flavored fondant center coated in rich dark chocolate. These easy no-cook treats combine the tartness of cherry juice with the sweetness of powdered sugar and buttery softness, perfect for holiday gifting or a special homemade dessert.

Ingredients

Scale

Fondant

  • 2 cups powdered sugar
  • 2 tablespoons unsalted butter (softened)
  • 2 tablespoons tart cherry juice (or concentrate)
  • ½ teaspoon vanilla extract
  • Pinch of salt

Chocolate Coating

  • 4 ounces dark chocolate
  • 1 teaspoon coconut oil (optional, for smoother chocolate)

Garnish (Optional)

  • Dried tart cherries

Instructions

  1. Prepare the fondant mixture: In a medium bowl, combine the powdered sugar, softened butter, tart cherry juice, vanilla extract, and a pinch of salt. Mix thoroughly until a smooth, thick dough forms. If the mixture feels too sticky, gradually add more powdered sugar until it becomes workable.
  2. Form the candies: Shape the fondant mixture into small balls or flatten them into discs, then place them on a parchment-lined baking sheet. Freeze for 15 to 20 minutes until the pieces are firm.
  3. Melt the chocolate coating: While the fondant chills, melt the dark chocolate and optional coconut oil together in a heatproof bowl set over simmering water or microwave in short bursts, stirring frequently until smooth and glossy.
  4. Dip and garnish: Dip each chilled fondant piece into the melted chocolate, allowing excess chocolate to drip off. Place coated candies back on the parchment. If desired, top each with a small piece of dried tart cherry before the chocolate sets.
  5. Chill and store: Refrigerate the dipped fondant creams until the chocolate hardens completely. Store the candies in an airtight container in the refrigerator to keep fresh, enjoying within two weeks.

Notes

  • For a more pronounced cherry flavor, substitute or supplement tart cherry juice with cherry extract.
  • Use natural food coloring to tint the fondant pink for a festive appearance.
  • These candy treats make thoughtful homemade gifts and can be stored chilled for up to 2 weeks.
