Taro and Tapioca Pearls
- 2 lb Taro, cut into large cubes
- 1/2 cup tapioca pearls
- 5 cups water (for boiling pearls and cooking taro)
Coconut Mixture
- 1 (13.5 oz) can coconut milk
- 100 g rock sugar (adjust to taste)
Instructions
- Prepare tapioca pearls: Fill a pot with 5 cups of water and bring it to a rolling boil.
- Cook tapioca pearls: Reduce the heat to a simmer and add the tapioca pearls. Cook for about 15 minutes, stirring constantly until the pearls turn translucent.
- Soak tapioca pearls: Turn off the heat, cover the pot, and let the pearls sit for 10 to 15 minutes to finish cooking, then strain and rinse them under cold water to remove excess starch.
- Cook taro: In a large pot, add the cubed taro, rock sugar, and enough water to cover the taro. Bring to a boil, then reduce heat and simmer for about 20 minutes until the taro is soft and tender.
- Add coconut milk: Stir in the coconut milk gently into the cooked taro mixture. Continue cooking over low heat for another 5 minutes to combine the flavors and heat through.
- Combine tapioca pearls with taro mixture: Drain any residual water from the tapioca pearls and add them to the taro coconut mixture. Stir well to integrate all elements together before serving.

- Adjust rock sugar quantity depending on your preferred sweetness level.
- Stir tapioca pearls constantly while cooking to prevent sticking.
- This dessert can be served warm or chilled based on personal preference.
- Use fresh taro for best texture and flavor; frozen taro can also be used but may alter consistency slightly.
