This hearty and flavorful Taco Soup combines ground beef, beans, corn, and tomatoes simmered together with taco seasoning and spices, creating a comforting Mexican-American classic perfect for an easy weeknight meal.

Ingredients

Scale

Main Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning mix (about 1 ounce)
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) corn kernels, drained
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 2 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Prepare Aromatics: Heat olive oil in a large pot over medium heat. Add the diced onion and cook for about 3 to 4 minutes until softened.
  2. Add Garlic: Stir in the minced garlic and cook for another 30 seconds until fragrant.
  3. Brown Beef: Add the ground beef to the pot and cook until browned, breaking it apart with a spoon. Drain excess grease if necessary.
  4. Season Beef: Stir in the taco seasoning, ground cumin, and chili powder. Cook for 1 minute to develop the flavors.
  5. Add Remaining Ingredients: Add black beans, kidney beans, corn, diced tomatoes, diced tomatoes with green chilies, tomato paste, and beef broth. Stir well to combine.
  6. Simmer Soup: Bring the soup to a gentle boil, then reduce heat and simmer uncovered for 20 to 25 minutes, stirring occasionally to blend flavors.
  7. Season and Garnish: Season with salt and black pepper to taste. Stir in chopped fresh cilantro just before serving.

Notes

  • Serve with toppings like shredded cheese, sour cream, diced avocado, tortilla chips, or sliced green onions for added texture and flavor.
  • Substitute ground turkey for beef for a lighter version of the soup.
  • This soup stores well in the refrigerator and often tastes even better the next day as flavors meld.
