- 1 can (15 ounces) corn kernels, drained
- 1 can (14.5 ounces) diced tomatoes
- 1 can (10 ounces) diced tomatoes with green chilies
- 2 cups beef broth
- 1 tablespoon tomato paste
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh cilantro
Instructions
- Prepare Aromatics: Heat olive oil in a large pot over medium heat. Add the diced onion and cook for about 3 to 4 minutes until softened.
