Description

A refreshing no-bake dessert perfect for summer, featuring layers of crunchy graham crackers, creamy vanilla pudding mixed with cream cheese and whipped topping, and fresh summer berries. This Summer Berry Bliss Icebox Delight is chilled to soften the layers and finished with a white chocolate drizzle for a delightful touch of sweetness.

Ingredients

Scale

Graham Cracker Layer

  • 19 oz graham crackers

Pudding Mixture

  • 8 oz cream cheese, softened
  • 2 (3.4 oz) packages vanilla instant pudding mix
  • 2-1/2 cups cold milk

Whipped Cream Layer

  • 12 oz Cool Whip or homemade whipped cream

Fruit Layers

  • 3 cups fresh strawberries, sliced
  • 1-1/2 cups fresh blueberries

Topping

  • 2 oz white chocolate chips

Instructions

  1. Prepare the pudding mixture: In a large bowl, beat the softened cream cheese and dry vanilla pudding mixes together with a mixer until smooth and fully blended.
  2. Add the milk: Slowly pour in the cold milk while continuing to beat the mixture until combined and smooth.
  3. Fold in whipped cream: Gently fold in the Cool Whip or homemade whipped cream into the pudding mixture. Reserve ½ cup of whipped cream for topping later.
  4. Layer the dessert: Spread a thin layer of the reserved Cool Whip in the bottom of a 9×13 inch pan. Then create alternating layers starting with graham crackers, followed by the pudding mixture, then fresh sliced strawberries and blueberries. Repeat these layers evenly until the pan is filled.
  5. Chill the dessert: Cover and refrigerate for at least 4 hours, preferably overnight, allowing the graham crackers to soften and the flavors to meld.
  6. Add the finishing touch: Before serving, melt the white chocolate chips and drizzle the melted chocolate evenly over the top of the dessert for an elegant and delicious finish.

Notes

  • For best texture, allow the dessert to chill overnight rather than only 4 hours.
  • You can substitute fresh raspberries or blackberries if desired.
  • Homemade whipped cream can be used instead of Cool Whip for a fresher taste.
  • Use a sharp knife dipped in hot water to cut clean slices.
  • This dessert is best served chilled but can be stored covered in the refrigerator for up to 3 days.
