Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s ready for baking the stuffed chicken breasts later.
  2. Prepare Chicken Pockets: Carefully slice horizontally into each chicken breast to create a pocket, making sure not to cut all the way through to hold the filling inside.
  3. Make Filling: In a mixing bowl, combine chopped spinach, ricotta cheese, Parmesan cheese, breadcrumbs, minced garlic, dried oregano, salt, and pepper. Mix thoroughly until all ingredients are evenly incorporated.
  4. Stuff Chicken: Spoon the spinach and cheese mixture into each chicken breast pocket, then secure the opening with toothpicks to prevent the filling from spilling out during cooking.
