  • 2 tbsp cornstarch
  • 1/4 tsp salt
  • 1 cup water
  • 1 tbsp lemon juice

For the glaze:

  • 1/4 cup strawberry jam or jelly
  • 1 tbsp water


Instructions

  1. Preheat and prepare crust: Preheat your oven to 375°F (190°C). Roll out the pie crusts and fit them into a 9-inch pie dish. Trim the edges and crimp them to form a decorative border. Optionally, sprinkle a bit of sugar on the crust for added sweetness.
  2. Bake crust: Prick the bottom of the crust with a fork to prevent bubbling and bake for 10-12 minutes until lightly golden. Remove from the oven and allow to cool.
  3. Make filling base: In a saucepan, combine sugar, cornstarch, and salt. Gradually whisk in water until smooth. Heat over medium, stirring constantly, until the mixture thickens and becomes glossy, about 5-7 minutes.
  4. Add flavorings: Remove the saucepan from heat and stir in lemon juice and vanilla extract. Let the mixture cool slightly to avoid cooking the berries on contact.
  5. Combine strawberries and filling: In a large bowl, gently toss halved strawberries with the cooled sugar mixture, ensuring all berries are evenly coated.
  6. Fill crust: Pour the strawberry mixture into the cooled pie crust and spread evenly.
  7. Prepare glaze: Microwave strawberry jam with water for 20-30 seconds, stirring until smooth. Brush this glaze evenly over the top of the strawberries to create a glossy finish.
