Description

Strawberry Peach Crisp is a delightful summer dessert featuring juicy strawberries and peaches topped with a crunchy oat and almond topping. This easy-to-make crisp offers a perfect combination of sweet, fresh fruit and a buttery, crunchy topping baked to golden perfection. Serve warm with vanilla ice cream or enjoy chilled as a refreshing treat.

Ingredients

Scale

Fruit Mixture

  • 2 cups fresh strawberries, hulled and halved
  • 2 cups fresh peaches, peeled and sliced
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • Optional: 1/2 teaspoon ground cinnamon

Topping

  • 3/4 cup rolled oats
  • 1/3 cup all-purpose flour
  • 1/3 cup sliced almonds
  • 1/3 cup brown sugar, packed
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/3 cup unsalted butter, cold and diced

Instructions

  1. Preheat Oven and Prepare Fruit: Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the sliced peaches, halved strawberries, granulated sugar, lemon juice, and cinnamon if using. Toss gently to coat the fruit evenly.
  2. Make the Crisp Topping: In a separate bowl, mix together rolled oats, flour, sliced almonds, brown sugar, cinnamon, and salt. Add the cold, diced butter and use your fingers or a pastry cutter to blend until the mixture resembles coarse crumbs.
  3. Assemble the Crisp: Transfer the fruit mixture to a greased 8-inch baking dish or similar size. Evenly sprinkle the oat and almond topping over the fruit layer.
  4. Bake the Crisp: Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the topping is golden brown and the fruit mixture is bubbling around the edges.
  5. Cool and Serve: Remove the crisp from the oven and allow it to cool for at least 10 minutes before serving. Enjoy warm with a scoop of vanilla ice cream or serve chilled as desired.
  6. Optional Variations: Try swapping strawberries with blueberries or raspberries, or add shredded coconut or different nuts to the topping for added texture and flavor.

Notes

  • For extra flavor, sprinkle cinnamon on the fruit mixture before baking.
  • Use ripe but firm peaches for the best texture.
  • Serve warm with vanilla ice cream or whipped cream for an indulgent dessert.
  • This crisp can be stored in the refrigerator for up to 3 days; reheat before serving.
  • Gluten-free oats and flour can be used to make the recipe gluten-free.
