Instructions

- Make the Strawberry Mixture: In a small saucepan over medium heat, combine the diced strawberries, granulated sugar, and cornstarch. Stir occasionally and cook until the mixture thickens to a jam-like consistency. Remove from heat and allow it to cool completely.
- Assemble the Eggrolls: Place one eggroll wrapper on a flat surface in a diamond orientation. Spread about 1 tablespoon of cheesecake filling in the center, then add 1 teaspoon of the cooled strawberry mixture on top. Fold the bottom corner over the filling, then fold in the sides tightly. - Fry the Eggrolls: Heat vegetable oil in a deep skillet or pot to 350°F (175°C), maintaining about 2 inches of oil depth.
