Ingredients
Scale
Chicken and Seasoning
- 2 pounds boneless skinless chicken thighs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Sauce
- 1 tablespoon olive oil
- 1 cup Guinness stout
- 1/3 cup brown sugar
- 1/4 cup soy sauce
- 2 tablespoons tomato paste
- 3 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 tablespoon apple cider vinegar
- 1 teaspoon smoked paprika
Thickening
- 1 tablespoon cornstarch
- 2 tablespoons water
Garnish
- 2 tablespoons chopped fresh parsley
Instructions
- Season the Chicken: Pat the chicken thighs dry, then evenly coat them with salt, black pepper, garlic powder, and onion powder to infuse initial flavors.
- Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken thighs and sear for 2 to 3 minutes on each side until lightly browned to lock in juices.
- Prepare the Sauce: In a bowl, whisk together Guinness stout, brown sugar, soy sauce, tomato paste, minced garlic, Worcestershire sauce, apple cider vinegar, and smoked paprika until smooth and well combined.
- Cook the Chicken: You may either transfer the seared chicken to a slow cooker and pour the sauce over it, cooking on low for 5 to 6 hours, or leave the chicken in the skillet with the sauce, cover, and simmer on low heat for 30 to 40 minutes until tender and fully cooked.
- Thicken the Sauce: Remove the cooked chicken and keep warm. Mix cornstarch with water to form a slurry, then stir it into the sauce. Simmer the sauce for a few minutes in the skillet or slow cooker until it thickens to a glossy glaze.
- Coat and Garnish: Return the chicken to the thickened sauce, turning to coat thoroughly. Garnish with freshly chopped parsley before serving to add color and freshness.
Notes
- For an even richer flavor, allow the sauce to simmer longer to deepen the taste.
- This dish pairs wonderfully with mashed potatoes, steamed rice, or roasted vegetables for a complete meal.
- If you desire a thicker sauce, add a little more cornstarch slurry and continue cooking until reaching your preferred consistency.
