Description

Celebrate St. Patrick’s Day with these festive Rice Krispie Treat Bites, featuring classic marshmallow and crispy cereal combined with green food coloring, topped with chocolate and sprinkles for a fun, sweet holiday snack.

Ingredients

Scale

Base Mixture

  • 3 tablespoons butter
  • 1 package (10 oz) marshmallows
  • 6 cups Rice Krispies cereal
  • Green food coloring (a few drops)

Toppings

  • 1/2 cup chocolate chips
  • 1/4 cup green sprinkles

Instructions

  1. Melt Butter: Melt the butter in a large saucepan over low heat to ensure it doesn’t burn and provides a smooth base for the marshmallows.
  2. Melt Marshmallows: Add the entire package of marshmallows to the melted butter and stir continuously until fully melted and smooth.
  3. Add Color: Stir in a few drops of green food coloring to the melted marshmallow mixture to give it the festive St. Patrick’s Day hue.
  4. Combine with Cereal: Remove the saucepan from heat. Quickly add the Rice Krispies cereal to the marshmallow mixture and stir thoroughly until all the cereal is evenly coated.
  5. Press Mixture into Pan: Transfer the mixture into a greased 9×13 inch pan. Use a spatula or wax paper to press it evenly and firmly to the edges.
  6. Cool: Allow the treats to cool in the pan for about 10 minutes so they can set properly.
  7. Cut into Bites: Once set but still slightly warm, cut the mixture into small bite-sized squares for easy snacking.
  8. Add Toppings: Melt the chocolate chips separately and drizzle or dot on top of the bites, then immediately sprinkle the green sprinkles over the warm chocolate for a festive finishing touch.

Notes

  • Greasing the pan prevents sticking and helps with easy removal of the treats.
  • Do not overcook the marshmallows; melting them on low heat helps prevent burning.
  • Work quickly after mixing cereal to press the treats before the mixture hardens.
  • For a stronger green color, add more drops of food coloring gradually.
  • Use wax paper or a spatula dipped in butter to press the mixture to avoid sticking to your hands or utensil.
  • Stored in an airtight container, these treats can stay fresh for up to 3 days.
