Description

This Spinach Salmon Pasta is a creamy, flavorful Italian-inspired dish combining tender salmon chunks with fresh spinach and a rich Parmesan cream sauce. Perfect for a wholesome and satisfying weeknight dinner, it features al dente pasta tossed with a luscious sauce infused with garlic, lemon juice, and subtle spices for a delightful seafood pasta experience.

Ingredients

Scale

For the Pasta and Salmon

  • 8 ounces pasta such as fettuccine or penne
  • 2 tablespoons olive oil
  • 2 salmon fillets, skin removed and cut into chunks
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Sauce and Vegetables

  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 3 cups fresh spinach
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon lemon juice
  • 1/2 teaspoon dried Italian seasoning

Instructions

  1. Cook Pasta: Cook the pasta according to package instructions until al dente, then drain and set aside to keep warm.
  2. Cook Salmon: Heat olive oil in a large skillet over medium heat. Season the salmon chunks with salt and black pepper, then add them to the skillet. Cook for 3 to 4 minutes, gently turning the pieces until they are cooked through and tender. Remove the salmon from the skillet and set aside.
  3. Sauté Garlic: In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant, being careful not to burn it.
  4. Prepare Sauce: Pour in the heavy cream and bring it to a gentle simmer over medium heat. Stir in the grated Parmesan cheese, dried Italian seasoning, and red pepper flakes if using. Continue stirring until the cheese is melted and the sauce thickens slightly.
  5. Wilt Spinach: Add the fresh spinach to the skillet and cook until wilted, stirring to combine it well with the sauce.
  6. Combine Salmon and Pasta: Return the cooked salmon chunks to the skillet and gently fold them into the sauce. Then add the drained pasta and toss everything together until the pasta is evenly coated with the creamy sauce.
  7. Finish and Serve: Drizzle the lemon juice over the pasta, taste, and adjust seasoning with salt or pepper as needed. Serve immediately for a warm, satisfying meal.

Notes

  • Substitute half-and-half for heavy cream for a lighter sauce variation.
  • Use whole wheat pasta to increase the fiber content of the dish.
  • For added flavor complexity, consider adding sun-dried tomatoes or capers.
  • Be careful not to overcook the salmon to maintain its tender and flaky texture.
