Ingredients
Scale
Filling
- 1 cup frozen chopped spinach (thawed and squeezed dry)
- 1 cup canned or jarred artichoke hearts (drained and finely chopped)
- 4 oz cream cheese (softened)
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 garlic clove (minced)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes (optional)
Pastry
- 1 sheet puff pastry (thawed)
- 1 egg (beaten, for egg wash)
Instructions
- Preheat Oven and Prepare Baking Sheet: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and promote even baking.
- Mix Filling Ingredients: In a medium bowl, combine the thawed and squeezed spinach, finely chopped artichoke hearts, softened cream cheese, shredded mozzarella, grated Parmesan, minced garlic, salt, black pepper, and optional crushed red pepper flakes. Mix thoroughly until well combined.
- Roll and Cut Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry sheet gently to smooth any folds. Cut the pastry into 12 equal squares to create uniform bites.
- Assemble Bites: Place a heaping tablespoon of the spinach-artichoke mixture in the center of each pastry square. Fold the corners slightly over the filling for a closed look or leave them open for a rustic presentation.
- Apply Egg Wash: Brush the edges of the pastry squares with beaten egg to help seals and give a golden color when baked.
- Bake: Transfer the prepared bites onto the lined baking sheet. Bake in the preheated oven for 15 to 18 minutes or until the puff pastry is golden brown and puffed up.
- Cool and Serve: Allow the spinach artichoke bites to cool slightly before serving to ensure the filling sets and is safe to eat.
Notes
- You can use mini phyllo shells instead of puff pastry for a lighter version.
- These bites can be made ahead and reheated in the oven for convenience.
- Add chopped cooked bacon to the filling mixture for a heartier variation.
