Quesadillas

  • 4 large flour tortillas
  • 200g shredded cheese (cheddar or Monterey Jack)

Instructions

  1. Prepare the Filling: In a skillet, heat the olive oil over medium heat. Add the chopped onion, minced garlic, and chopped bell pepper. Cook them for about 3-5 minutes until they become soft and fragrant. Stir in the ground beef, then season with chili powder, cumin, salt, and pepper. Cook while breaking up the meat with a spatula until browned and fully cooked through.
  2. Assemble the Quesadilla: Place one flour tortilla in the same skillet. Sprinkle a generous layer of shredded cheese over half of the tortilla, add a portion of the cooked mince mixture on top of the cheese, and then sprinkle more cheese over the meat. Fold the tortilla in half over the filling.
  3. Cook Until Golden: Cook the folded quesadilla for 3-4 minutes on each side over medium heat. This allows the tortilla to become crispy and golden brown, and the cheese to melt thoroughly inside.
  4. Repeat: Remove the cooked quesadilla and keep warm. Repeat the assembling and cooking process with the remaining tortillas and filling.
  5. Serve: Cut each quesadilla into wedges. Garnish with fresh cilantro if desired and serve immediately alongside sour cream or salsa for dipping.
