Description

Spicy Korean Ramen Beef is a flavorful and quick-to-make dish combining tender marinated beef, crisp vegetables, and spicy Korean ramen noodles in a rich, savory broth. Perfect for a comforting meal with a spicy kick, this recipe uses classic Korean ingredients like gochujang, gochugaru, and kimchi to deliver authentic taste with minimal effort.

Ingredients

Scale

Beef Marinade

  • 1 pound beef sirloin, thinly sliced against the grain
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 teaspoon minced garlic
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon black pepper

Vegetables and Broth

  • 1 tablespoon vegetable oil
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 4 ounces mushrooms, sliced (shiitake, cremini, or button)
  • 1/2 cup kimchi, chopped (optional)
  • 8 cups water
  • 4 packets instant ramen noodles (Korean Shin Ramyun recommended for spice)
  • 2 tablespoons soy sauce
  • 1 tablespoon gochugaru (Korean chili flakes, adjust to taste)
  • 1 teaspoon sugar
  • 1 teaspoon fish sauce (optional)
  • 1 cup bean sprouts

Garnishes

  • 2 soft-boiled eggs, halved
  • 2 green onions, thinly sliced
  • Sesame seeds, for garnish
  • Nori seaweed sheets, cut into strips

Instructions

  1. Preparing the Beef: In a medium bowl, combine the thinly sliced beef sirloin with soy sauce, sesame oil, gochujang, minced garlic, ground ginger, and black pepper. Mix well to coat the beef evenly with the marinade. Let it marinate for at least 15 minutes or refrigerate for up to 30 minutes for best flavor.
  2. Sautéing the Vegetables and Beef: Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Add the sliced onion and cook until softened and translucent, about 3-5 minutes. Add minced garlic and sauté an additional minute until fragrant. Add the marinated beef and cook until browned on all sides, approximately 5-7 minutes. Stir in the sliced red and green bell peppers along with mushrooms and cook until the vegetables are tender-crisp, about 3-5 minutes. If using kimchi, add it now and cook for another minute, stirring to combine all ingredients.
  3. Cooking the Ramen and Enhancing the Broth: Pour 8 cups of water into the pot with the sautéed vegetables and beef mixture, and bring to a boil. Once boiling, add the ramen noodles and cook following package instructions, usually 3-5 minutes. While the noodles cook, stir in soy sauce, gochugaru, sugar, and fish sauce if using. Mix well to dissolve the sugar and combine flavors. Taste and adjust seasoning if needed. Add bean sprouts during the last minute of cooking.
  4. Assembling and Serving: Divide the ramen noodles, beef, vegetables, and broth evenly between four bowls. Garnish each bowl with sliced green onions and a sprinkle of sesame seeds. Place a halved soft-boiled egg in each bowl and add strips of nori seaweed if desired. Serve immediately while hot to enjoy a hearty and spicy Korean ramen beef experience.

Notes

  • Marinate the beef longer for deeper flavor, up to 30 minutes refrigerated.
  • Adjust the amount of gochujang and gochugaru to control spice level.
  • Soft-boil eggs by boiling them for 6-7 minutes and then placing them in ice water before peeling.
  • Kimchi adds extra spice and texture but can be omitted if preferred.
  • Use Korean Shin Ramyun for authentic spicy flavor; any instant ramen can be substituted.
  • Be mindful of saltiness when adding soy sauce and fish sauce; adjust to taste.
