Salmon Mixture
- 2 cans of salmon (approximately 14.75 ounces each)
- 1 small onion, finely diced
- 2 eggs
- 6 tablespoons mayonnaise

- 6 tablespoons flour
- 6 tablespoons cornmeal

- Oil for frying (such as vegetable oil)
Instructions
- Prepare the Salmon Mixture: Open the salmon cans and empty the contents into a large mixing bowl. Optionally, remove any pin bones for a smoother texture. Add the finely diced onion, eggs, and mayonnaise into the bowl. Stir all ingredients together until well combined and the mixture is uniform.
- Add Dry Ingredients: Gradually mix in the flour and cornmeal to the wet ingredients, stirring thoroughly until the mixture is evenly combined and holds together for forming patties.
- Heat Oil: Pour enough oil into a cast iron or heavy-bottomed skillet to cover the bottom about 1/4 inch deep. Place the skillet over medium heat and allow the oil to heat until shimmering but not smoking.
- Form Patties: Use an ice cream scoop to portion the salmon mixture, ensuring consistent sizing. Flatten each scoop gently by hand or with a spatula to create evenly shaped patties.
- Fry the Patties: Carefully place the patties in the hot oil, leaving space between each. Fry on medium heat until each side is golden brown, approximately 3-4 minutes per side. Flip carefully to avoid breakage.
- Finish and Serve: Once cooked through and crisp, remove the patties from the skillet and drain on paper towels. Lightly sprinkle with salt to taste. Serve warm with your preferred dipping sauce. For an extra kick, consider mixing chopped jalapeños into the salmon mixture before forming the patties.
