Peach Filling

- 1/2 cup light brown sugar, packed
- 1/4 teaspoon ground cinnamon

- 2 teaspoons lemon juice
- 1 tablespoon cornstarch

- 1/2 cup unsalted butter (1 stick)
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
Instructions
- Preheat Oven: Preheat the oven to 375°F (190°C) to prepare for baking the cobbler.
- Prepare Peach Mixture: In a large bowl, gently combine the peeled and sliced peaches with 1 cup granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch until peaches are evenly coated. Set aside to allow flavors to meld.
- Melt Butter: Place the unsalted butter in a 9×13-inch baking dish and put it in the oven until the butter has melted completely. Carefully remove from the oven once melted.
- Make Batter: In a separate bowl, mix the flour, 1 cup granulated sugar, baking powder, and salt. Gradually add the milk while stirring until a smooth batter forms.
- Assemble Cobbler: Pour the batter evenly over the melted butter in the baking dish. Do not mix; the butter will integrate during baking.
- Add Peach Topping: Spoon the peach mixture evenly over the batter without stirring, allowing the batter to rise during baking and form a cobbler crust.
- Bake: Bake in the preheated oven for 40-45 minutes until the top is golden brown and the cobbler is set and bubbly.
