Ingredients
Scale
Dough Ingredients
- 1 1/2 cups warm water (about 110°F)
- 2 1/4 teaspoons active dry yeast
- 1 tablespoon granulated sugar
- 4 cups all-purpose flour
- 1 teaspoon salt
- 2 tablespoons unsalted butter, melted
Boiling Solution
- 10 cups water
- 2/3 cup baking soda
Topping and Finishing
- 1 large egg beaten with 1 tablespoon water
- Coarse salt for topping
Instructions
- Activate yeast: In a large bowl, combine the warm water, active dry yeast, and granulated sugar. Let the mixture sit for about 5 minutes until it becomes foamy, indicating the yeast is active.
- Make dough: Add the all-purpose flour, salt, and melted unsalted butter to the yeast mixture. Stir until a dough forms, then turn it out onto a lightly floured surface.
- Knead dough: Knead the dough for approximately 5 to 7 minutes until it becomes smooth and elastic, which develops the gluten structure for the soft texture.
- Let dough rise: Place the dough in a lightly greased bowl, cover it with a clean towel or plastic wrap, and let it rise in a warm place for about 1 hour or until the dough has doubled in size.
- Preheat oven and prepare baking sheets: Preheat your oven to 425°F (220°C) and line two baking sheets with parchment paper to prevent sticking.
- Prepare boiling solution: In a large pot, bring 10 cups of water and 2/3 cup of baking soda to a rolling boil. This alkaline bath gives the pretzel bites their signature chewy crust and color.
- Shape pretzel bites: Divide the risen dough into four equal pieces. Roll each piece into ropes about 1/2 inch thick, then cut the ropes into bite-sized pieces, roughly 1 to 1.5 inches long.
- Boil pretzel bites: Working in batches, carefully drop pretzel bites into the boiling baking soda water. Boil each batch for 20 to 30 seconds; the bites will float when done. Remove them with a slotted spoon and set them on the prepared baking sheets.
- Brush with egg wash and salt: Lightly brush each pretzel bite with the beaten egg and water mixture. Sprinkle generously with coarse salt to taste.
- Bake: Bake in the preheated oven for 12 to 15 minutes until the pretzel bites turn a rich golden brown color.
- Serve: Allow the pretzel bites to cool slightly before serving warm. Enjoy them plain or with your favorite dips such as cheese sauce, mustard, or chocolate sauce.
Notes
- For a sweeter twist, brush the baked pretzel bites with melted butter and sprinkle cinnamon sugar instead of coarse salt.
- These pretzel bites pair wonderfully with cheese dip, mustard, or chocolate sauce for dipping.
- Ensure not to over boil the pretzel bites; 20 to 30 seconds is sufficient to get the signature chewy crust.
- You can store leftover pretzel bites in an airtight container and reheat in the oven to restore freshness.
