Instructions

  2. Sauté Onion: In a skillet over medium heat, warm the olive oil and sauté the diced onion until it softens, about 3 to 4 minutes.
  3. Add Spices and Garlic: Stir in minced garlic, chili powder, ground cumin, smoked paprika, salt, and black pepper; cook for about 30 seconds until the spices are fragrant.
  4. Combine Chicken and Sauce: Add shredded chicken and 1/4 cup of the enchilada sauce to the skillet, mixing everything well and heating through.
  5. Assemble Burritos: Spoon the chicken mixture evenly onto the center of each tortilla. Sprinkle cheddar and Monterey Jack cheeses over the chicken, then roll each tortilla tightly and place seam-side down in the baking dish.
  6. Add Sauce and Cheese on Top: Pour the remaining enchilada sauce over the burritos and sprinkle with the remaining cheese evenly.
