Burrito Assembly
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese

Instructions
- Preheat Oven: Preheat your oven to 375°F and lightly grease a 9×13-inch baking dish to prepare for baking the burritos.
- Sauté Onion: In a skillet over medium heat, warm the olive oil and sauté the diced onion until it softens, about 3 to 4 minutes.
- Add Spices and Garlic: Stir in minced garlic, chili powder, ground cumin, smoked paprika, salt, and black pepper; cook for about 30 seconds until the spices are fragrant.
- Combine Chicken and Sauce: Add shredded chicken and 1/4 cup of the enchilada sauce to the skillet, mixing everything well and heating through.
- Assemble Burritos: Spoon the chicken mixture evenly onto the center of each tortilla. Sprinkle cheddar and Monterey Jack cheeses over the chicken, then roll each tortilla tightly and place seam-side down in the baking dish.
- Add Sauce and Cheese on Top: Pour the remaining enchilada sauce over the burritos and sprinkle with the remaining cheese evenly.
- Bake Covered: Cover the dish with foil and bake for 20 minutes to heat and meld the flavors.
