For the Burger Tacos
- 1 pound Ground Beef (80/20 fat percentage)
- 1 teaspoon Kosher Salt
- 1 teaspoon Black Pepper
- 4 pieces Six-Inch Flour Tortillas
- 4 slices Muenster or Provolone Cheese
- 1 cup Shredded Lettuce
- 1 cup Chopped White Onion
- 1 cup Dill Pickle Chips
For the Burger Sauce
- 1/2 cup Mayo
- 1 teaspoon Paprika
- 1 teaspoon Onion Powder
- 1 teaspoon Garlic Powder
- 1 teaspoon Mustard
- 2 tablespoons Minced Bread & Butter Pickles
- 1 tablespoon Pickle Brine
- 1/4 teaspoon Worcestershire Sauce
- 1 teaspoon Black Pepper
Instructions
- Prepare Burger Sauce: In a bowl, whisk together mayo, paprika, onion powder, garlic powder, mustard, minced pickles, pickle brine, black pepper, and Worcestershire sauce until smooth. Refrigerate this creamy, zesty sauce until ready to use.
- Mix Beef: Combine kosher salt and black pepper with the ground beef thoroughly. Divide the beef into 2 1/2-ounce balls and keep them chilled in the refrigerator for a few minutes to maintain shape and juiciness.
- Heat Griddle: Preheat a flat-top griddle on high heat until it is very hot and beginning to smoke—this ensures a perfect sear on the patties.
- Cook Beef Patties: Place each beef ball onto the hot griddle. Immediately place a tortilla on top of each beef ball, then press down firmly using a burger press or spatula to smash the patties thin and maximize browning.
