Description

This Slow Cooker Garlic Parmesan Chicken and Potatoes recipe is a hearty, flavorful one-pot meal perfect for busy days. Tender chicken breasts are seasoned, coated in rich Buffalo Wild Wings Garlic Parmesan Sauce, and slow-cooked over perfectly seasoned potatoes, creating a comforting dish topped with melted mozzarella cheese.

Ingredients

Scale

Chicken

  • 1 lb chicken breasts
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 2 tbsp minced garlic
  • Buffalo Wild Wings Garlic Parmesan Sauce (enough to coat chicken)
  • 1 cup shredded mozzarella cheese

Potatoes

  • 5 medium-sized potatoes, chopped into bite-sized pieces
  • 2 tbsp olive oil
  • Salt, pepper, garlic powder, paprika (to season potatoes)

Instructions

  1. Prepare the Potatoes: Wash and chop the potatoes into bite-sized pieces. In a bowl, toss them with olive oil, salt, pepper, garlic powder, and paprika until evenly coated.
  2. Layer Potatoes in Slow Cooker: Place the seasoned potatoes at the bottom of the slow cooker, forming an even layer.
  3. Season the Chicken: Season the chicken breasts evenly on all sides with salt, pepper, paprika, onion powder, and Italian seasoning.
  4. Arrange Chicken Over Potatoes: Lay the seasoned chicken breasts on top of the potatoes inside the slow cooker.
  5. Add Garlic: Spread the minced garlic evenly over the chicken breasts to infuse flavor.
  6. Coat Chicken with Sauce: Pour enough Buffalo Wild Wings Garlic Parmesan Sauce over the chicken to coat it thoroughly, ensuring maximum flavor.
  7. Cook: Cover the slow cooker and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is cooked through and the potatoes are tender.
  8. Add Cheese: In the last 30 minutes of cooking, sprinkle shredded mozzarella cheese over the top. Cover again and let the cheese melt completely.
  9. Serve: Serve the chicken and potatoes warm, optionally garnished with extra Parmesan cheese or fresh herbs for added flavor and presentation.

Notes

  • Use medium-sized potatoes for even cooking; russet or Yukon gold work best.
  • Adjust seasoning quantities to your preference, especially salt and garlic.
  • If you prefer crispier edges, after slow cooking, transfer to a baking dish and broil for 3–5 minutes.
  • Ensure the chicken reaches an internal temperature of 165°F (75°C) before serving for food safety.
  • Buffalo Wild Wings Garlic Parmesan Sauce can be substituted with any garlic parmesan sauce or homemade version if preferred.
