Ingredients
Scale
Chicken
- 1 lb chicken breasts
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1 tsp onion powder
- 1 tsp Italian seasoning
- 2 tbsp minced garlic
- Buffalo Wild Wings Garlic Parmesan Sauce (enough to coat chicken)
- 1 cup shredded mozzarella cheese
Potatoes
- 5 medium-sized potatoes, chopped into bite-sized pieces
- 2 tbsp olive oil
- Salt, pepper, garlic powder, paprika (to season potatoes)
Instructions
- Prepare the Potatoes: Wash and chop the potatoes into bite-sized pieces. In a bowl, toss them with olive oil, salt, pepper, garlic powder, and paprika until evenly coated.
- Layer Potatoes in Slow Cooker: Place the seasoned potatoes at the bottom of the slow cooker, forming an even layer.
- Season the Chicken: Season the chicken breasts evenly on all sides with salt, pepper, paprika, onion powder, and Italian seasoning.
- Arrange Chicken Over Potatoes: Lay the seasoned chicken breasts on top of the potatoes inside the slow cooker.
- Add Garlic: Spread the minced garlic evenly over the chicken breasts to infuse flavor.
- Coat Chicken with Sauce: Pour enough Buffalo Wild Wings Garlic Parmesan Sauce over the chicken to coat it thoroughly, ensuring maximum flavor.
- Cook: Cover the slow cooker and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is cooked through and the potatoes are tender.
- Add Cheese: In the last 30 minutes of cooking, sprinkle shredded mozzarella cheese over the top. Cover again and let the cheese melt completely.
- Serve: Serve the chicken and potatoes warm, optionally garnished with extra Parmesan cheese or fresh herbs for added flavor and presentation.
Notes
- Use medium-sized potatoes for even cooking; russet or Yukon gold work best.
- Adjust seasoning quantities to your preference, especially salt and garlic.
- If you prefer crispier edges, after slow cooking, transfer to a baking dish and broil for 3–5 minutes.
- Ensure the chicken reaches an internal temperature of 165°F (75°C) before serving for food safety.
- Buffalo Wild Wings Garlic Parmesan Sauce can be substituted with any garlic parmesan sauce or homemade version if preferred.
