Description

Sloppy Joe Cottage Pie is a comforting and hearty dish combining a flavorful seasoned ground beef mixture with a cheesy mashed potato topping. This easy-to-make casserole brings the classic flavors of sloppy joes into a satisfying baked pie, perfect for family dinners or casual gatherings.

Ingredients

Scale

Beef Mixture

  • 1¼ lb ground beef
  • 2 Tbsp brown sugar
  • 1 Tbsp yellow mustard
  • 3 large garlic cloves, finely chopped
  • 1 cube beef bouillon
  • ½ (28-oz) can crushed tomatoes (14 oz)
  • ½ cup ketchup
  • â…“ cup beef broth
  • 1 Tbsp tomato paste
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp cornstarch
  • 1 Tbsp cold water
  • Salt and black pepper, to taste

Mash Topping

  • 1 (32-oz) package precooked mashed potatoes
  • 1½ cups shredded colby jack cheese, divided (1 cup for mash, ½ cup for topping)

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 375ºF. Lightly spray a 9×13-inch baking dish with nonstick cooking spray to prevent sticking and set it aside.
  2. Cook Ground Beef and Combine Ingredients: In a large skillet over medium-high heat, cook the ground beef until browned. Drain excess grease. Add crushed tomatoes, ketchup, yellow mustard, chopped garlic, onion powder (assumed from the instructions though not listed as an ingredient), Worcestershire sauce, beef bouillon cube, beef broth, brown sugar, and tomato paste. Stir everything well, bring the mixture to a boil, then reduce heat and simmer for 5 minutes to develop flavors.
  3. Thicken the Mixture: Whisk together cornstarch and cold water until smooth. Add this slurry to the skillet and cook the mixture for 5 to 10 minutes until it thickens. Season with salt and black pepper to taste. Once thickened, transfer the beef mixture to the prepared baking dish.
  4. Prepare Mashed Potato Topping: In a bowl, mix the precooked mashed potatoes with 1 cup of shredded colby jack cheese until evenly combined. Spread this cheesy mashed potato mixture evenly over the beef layer in the baking dish.
  5. Bake and Add Cheese Topping: Bake the assembled casserole in the preheated oven for 20 minutes. After this, sprinkle the remaining ½ cup of shredded cheese on top and return to the oven. Continue baking for an additional 5 to 10 minutes, or until the potatoes are heated through and the cheese has melted and is bubbly.

Notes

  • You can substitute colby jack cheese with cheddar or your preferred melting cheese.
  • For added flavor, consider sprinkling some paprika or fresh herbs like parsley on top after baking.
  • If you don’t have precooked mashed potatoes, homemade mashed potatoes can be used instead.
  • The onion powder mentioned in instructions should be added if available; if not, fresh chopped onions may substitute.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
