Description

  • 1 tsp dried oregano
  • 1 tsp dried thyme

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking and ensure easy cleanup.
  2. Prepare the Veggies: Wash and prepare all vegetables by slicing the zucchini, yellow squash, and carrots; chopping the bell pepper and red onion; and halving the cherry tomatoes for even cooking.
  3. Toss the Veggies: In a large bowl, combine all the prepared vegetables. Drizzle with olive oil and sprinkle dried oregano, dried thyme, garlic powder, salt, and pepper. Toss thoroughly to coat all pieces evenly with the oil and seasonings.
  4. Roast the Vegetables: Spread the seasoned vegetables out in an even layer on the prepared baking sheet to promote uniform roasting and caramelization.
  5. Roast for 20-25 minutes: Place the baking sheet in the oven and roast the vegetables for 20 to 25 minutes, stirring halfway through the cooking time to ensure even roasting and prevent burning. The vegetables should be tender and slightly caramelized when done.
