Description
A delicious Mediterranean-inspired roasted garlic and herb flatbread that is crispy on the outside, soft on the inside, and infused with the rich flavor of roasted garlic and mixed herbs. Perfect as a side dish, for dips, or as a base for wraps, this vegan flatbread is easy to make using simple ingredients and stovetop cooking.

For the Flatbread Dough
- 2 cups all-purpose flour
- 1 tablespoon olive oil (plus more for brushing)
- 1 teaspoon salt
- 2 teaspoons dried mixed herbs (such as oregano, thyme, rosemary)
- 3/4 cup warm water
For the Roasted Garlic and Garnish
- 1 head of garlic
- Salt and black pepper to taste
- Chopped fresh parsley or herbs for garnish (optional)
Instructions
- Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the garlic head to expose the cloves, drizzle with olive oil, wrap it tightly in foil, and roast for 35–40 minutes until the garlic is soft and golden brown. Remove and allow it to cool.
- Prepare the Garlic Paste: Once cooled, squeeze the roasted garlic cloves out of the head into a bowl and mash them into a smooth paste using a fork or spoon.
- Make the Dough: In a large mixing bowl, combine the all-purpose flour, dried mixed herbs, and salt. Add the mashed roasted garlic, 1 tablespoon of olive oil, and warm water. Stir until a sticky dough forms.
- Knead the Dough: Transfer the dough to a floured surface and knead for 3–4 minutes until you achieve a smooth and elastic dough.
- Rest the Dough: Cover the dough with a clean kitchen towel or plastic wrap and let it rest for 10 minutes to relax the gluten.
- Shape the Flatbreads: Divide the rested dough into 4 equal portions. Roll each portion into a thin oval or circular shape with a rolling pin.
- Cook the Flatbreads: Heat a dry skillet or non-stick pan over medium-high heat. Place one flatbread into the pan and cook for 1–2 minutes on each side, until puffed and golden spots appear.
- Finish and Garnish: While still warm, brush the flatbreads with olive oil and sprinkle with salt, black pepper, and chopped fresh herbs if desired. Serve immediately for best flavor and texture.

- You can substitute all-purpose flour with whole wheat flour for a heartier texture and richer flavor.
