- 1 cup cooked rice noodles (vermicelli)
- 1 cup shredded lettuce or napa cabbage

- 1/4 cup fresh mint leaves
- 1/4 cup fresh cilantro leaves
- Warm water for softening wrappers
Dipping Sauce
- Dipping sauce of choice (such as hoisin-peanut or nuoc cham)
Instructions
- Soften the Rice Paper: Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water for about 10–15 seconds, just until it becomes soft and pliable. Carefully lay the wrapper flat on a clean surface or damp towel to prepare for filling.
- Assemble the Rolls: In the center of the softened wrapper, arrange 2 shrimp, a small handful of cooked rice noodles, shredded lettuce or napa cabbage, julienned carrot, julienned cucumber, fresh mint leaves, and fresh cilantro leaves. Be careful not to overfill to ensure easy rolling.
- Roll Tightly: Fold the sides of the rice paper over the filling, then roll from the bottom up tightly, fully enclosing the ingredients and securing the roll’s shape.
- Repeat and Serve: Repeat the process with the remaining wrappers and fillings. Arrange the rolls on a serving plate and serve immediately with your favorite dipping sauce such as hoisin-peanut or nuoc cham for a delicious accompaniment.
