Crab Mixture

Toppings and Bread
- 4 slices of Monterey Jack cheese or Swiss cheese (or Pepper Jack for spice)
- 1 four or five inch slice of baguette or 2 to 3 pieces of sliced bread
Instructions
- Toast the Bread: Place the French bread or ciabatta bread halves on a baking sheet and put them in the oven at 350°F (175°C) or under the broiler or grill. Toast for about five minutes until they begin to take on some color and crisp up slightly.
- Mix Crab Filling: In a bowl, combine the white crab meat with Dijon mustard, finely chopped red pepper, and celery. Stir the ingredients gently to distribute the flavors evenly.
- Add Cream and Season: Incorporate the crème fraîche or sour cream into the crab mixture, adding salt and pepper to taste. Mix gently to maintain the delicate texture.
- Assemble the Melts: Divide the crab mixture evenly between the toasted pieces of bread. Top each portion generously with slices of Monterey Jack, Swiss, or Pepper Jack cheese.
- Bake or Broil the Melts: Return the crab and cheese topped bread to the oven for five to ten minutes, or place under the broiler or grill, until the cheese has melted, turned bubbly, and developed a slight golden brown crust.
- Cool and Serve: Allow the crab melts to cool for a few minutes to avoid burning from the hot cheese. Serve one half of the baguette or several pieces of the panini to each person or cut into small appetizer-sized pieces to serve as hors d’oeuvres.
