Description

Cookie Dough

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 5–6 strawberry Pop-Tarts, chopped
  • ½ cup white chocolate chips (optional)

Layer & Glaze

  • ½ cup strawberry jam
  • ½ cup powdered sugar
  • 1–2 tablespoons milk
  • Rainbow sprinkles for topping (optional)


Instructions

  1. Prepare the Pan: Preheat the oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. Make the Dough: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs and vanilla extract until well combined.
  3. Combine Dry Ingredients: In a separate bowl, whisk together all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture and mix until a soft dough forms.
  4. Add Pop-Tarts & Chips: Gently fold in the chopped strawberry Pop-Tarts and white chocolate chips if using, incorporating them evenly throughout the dough.
  5. Form Base Layer: Spread two-thirds of the dough evenly into the prepared baking pan and press it down firmly to form the bottom crust.
  6. Add Jam Layer: Spread the strawberry jam evenly over the cookie dough base.
  7. Top Layer: Drop spoonfuls of the remaining dough over the jam layer. Gently spread it out to cover the jam as much as possible.
  8. Bake: Place the pan in the oven and bake for 25–30 minutes or until the top is golden brown and set.
  9. Cool: Remove the bars from the oven and allow them to cool completely in the pan.
  10. Prepare Glaze: Mix powdered sugar with 1 to 2 tablespoons of milk until smooth. Drizzle the glaze over the cooled bars.
  11. Garnish & Serve: Sprinkle rainbow sprinkles on top if desired. Cut into squares and serve.
