Ingredients
Scale
Beef and Marinade
- 1 lb beef, cut into strips, cubes, or thin slices (flank, sirloin, or ribeye)
- 1 tablespoon soy sauce
- 1 tablespoon rice wine
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch
- 1 teaspoon sugar
Vegetables and Aromatics
- 4 oz pepper of choice (bell pepper, jalapeño, poblano, etc.)
- 4 oz onion, cut into chunks or thin slices
- 1 teaspoon garlic, minced
- 1 teaspoon fresh ginger, sliced
- 2 scallions, cut into 1-inch pieces
Sauces and Oils
- 1 tablespoon oyster sauce
- 1 tablespoon cooking oil (such as vegetable or canola oil)
Instructions
- Prep: Slice or cube the beef to your preferred size. Cut the peppers and onions into your desired shapes. Prepare the scallions, ginger, and garlic by slicing and mincing as directed.
- Marinate: In a bowl or zip-top bag, combine the beef strips with soy sauce, rice wine, sesame oil, cornstarch, and sugar. Mix well to coat and let it marinate for 15 to 30 minutes to absorb the flavors and tenderize the meat.
- Cook Beef: Heat cooking oil in a large nonstick pan or wok over medium-high heat. Add the sliced ginger and marinated beef. Stir-fry the beef until it is mostly browned but not fully cooked through, then remove it from the pan to rest.
- Stir-Fry Veggies: If necessary, add a little more oil to the pan. Stir-fry the minced garlic, peppers, and onions for 2 to 3 minutes until they are just tender but still crisp, preserving their vibrant flavors and texture.
- Combine: Return the cooked beef to the pan with the vegetables. Add the scallions and oyster sauce. Stir-fry everything together for another 1 to 2 minutes until the beef is cooked through and all ingredients are well coated with the rich sauce.
- Serve: Serve the pepper steak and onion stir fry hot, ideally over a bed of steamed rice or cauliflower rice for a lower-carb option. Enjoy your flavorful, protein-packed meal!
Notes
- For best results, use high-quality cuts of beef such as flank, sirloin, or ribeye.
- Adjust the amount and type of peppers based on your heat preference.
- Marinating the beef enhances both flavor and tenderness, so don’t skip this step.
- If you prefer a thicker sauce, add a slurry of cornstarch and water towards the end of cooking and stir until thickened.
- This dish pairs perfectly with steamed white rice, brown rice, or cauliflower rice for a low-carb alternative.
- You can substitute oyster sauce with vegetarian mushroom sauce for a vegetarian variant, but omit beef and replace with firm tofu or seitan.
