Description

These Parmesan Fish Nuggets are a delicious, kid-friendly seafood option featuring tender white fish fillets coated in a crispy Parmesan and panko breadcrumb crust. Baked to golden perfection, they’re a healthier alternative to fried fish nuggets and perfect for a quick main course that pairs well with a variety of dipping sauces.

Ingredients

Scale

Fish and Coating

  • 1 pound white fish fillets (such as cod or haddock), cut into bite-sized pieces
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 3/4 cup grated Parmesan cheese
  • 3/4 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For Baking

  • Olive oil spray or 2 tablespoons olive oil for baking

Instructions

  1. Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Prepare Breading Stations: Set up three shallow bowls for breading: the first with all-purpose flour, the second with beaten eggs, and the third with a mixture of grated Parmesan cheese, panko breadcrumbs, garlic powder, paprika, salt, and black pepper.
  3. Coat the Fish Nuggets: Take each piece of fish and dip it first into the flour, ensuring it’s evenly coated. Then dip it into the beaten eggs, allowing excess to drip off. Finally, press the fish into the Parmesan-panko mixture, covering all sides thoroughly for a crispy crust.
  4. Arrange on Baking Sheet: Place the coated fish nuggets on the prepared baking sheet in a single layer. Lightly spray or drizzle olive oil over the tops of the nuggets to promote browning and crispiness during baking.
  5. Bake the Nuggets: Bake in the preheated oven for 15 to 18 minutes, flipping the nuggets halfway through to ensure even cooking. The nuggets should turn golden brown and the fish should flake easily with a fork when done.
  6. Serve Warm: Remove from the oven and serve immediately with your choice of dipping sauces such as tartar sauce, lemon aioli, or marinara for a tasty meal.

Notes

  • For extra crispiness, after baking, place the nuggets under the broiler for 1-2 minutes, watching carefully to prevent burning.
  • These nuggets can also be cooked in an air fryer at 375°F for 10-12 minutes as an alternative method.
  • To make gluten-free, substitute all-purpose flour and breadcrumbs with gluten-free versions.
