Instructions
- Preheat and Prep: Preheat your oven to 375°F (190°C) and lightly grease a mini muffin tin with nonstick cooking spray or oil to prevent sticking.
- Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt to evenly distribute the leavening agents and seasoning.
- Mix Wet Ingredients: In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until smooth and well combined to add moisture and flavor to the batter.
- Combine Batter: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix to keep the batter light and fluffy.
- Fill Muffin Tin: Spoon about 1 tablespoon of batter into each mini muffin cup, filling them evenly.
