Description

Pancake Sausage Bites are a fun and delicious breakfast treat combining fluffy pancake batter with savory sausage pieces baked into mini muffin cups. Perfect for a quick morning snack or kid-friendly breakfast, these bite-sized morsels are easy to make and great for serving with maple syrup.

Ingredients

Scale

Pancake Batter:

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup buttermilk
  • 1 large egg
  • 1 tablespoon melted butter
  • 1 teaspoon vanilla extract

Sausage:

  • 20 fully cooked breakfast sausage links

For Greasing:

  • Nonstick cooking spray or oil

Instructions

  1. Preheat and Prep: Preheat your oven to 375°F (190°C) and lightly grease a mini muffin tin with nonstick cooking spray or oil to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt to evenly distribute the leavening agents and seasoning.
  3. Mix Wet Ingredients: In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until smooth and well combined to add moisture and flavor to the batter.
  4. Combine Batter: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix to keep the batter light and fluffy.
  5. Fill Muffin Tin: Spoon about 1 tablespoon of batter into each mini muffin cup, filling them evenly.
  6. Add Sausage: Cut each fully cooked breakfast sausage link in half, then press one half piece into the center of each batter-filled muffin cup.
  7. Bake: Place the muffin tin in the oven and bake for 12 to 15 minutes, or until the tops are golden brown and a toothpick inserted into the batter comes out clean.
  8. Cool and Serve: Remove from the oven and allow the bites to cool slightly before serving. Serve warm with maple syrup if desired for added sweetness.

Notes

  • You can substitute turkey sausage or plant-based sausage for lighter or vegetarian options.
  • These bites freeze well; reheat in the microwave or oven before serving to enjoy them warm.
