Beef Marinade

  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 cups cooked rice (preferably day-old rice)
  • 1/2 cup frozen peas and carrots (optional)
  • 2 eggs, beaten
  • 2 tablespoons soy sauce (for the fried rice)
  • 1 teaspoon oyster sauce (optional)
  • 1 teaspoon rice vinegar
  • 1/4 teaspoon black pepper
  • 2 green onions, chopped (for garnish)

Instructions

  1. Marinate the beef: In a bowl, combine the thinly sliced beef with 2 tablespoons soy sauce and 1 teaspoon sesame oil. Mix well and let it marinate for at least 5 minutes to absorb the flavors.
  2. Cook the beef: Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the marinated beef and cook for 2-3 minutes, stirring occasionally, until browned and cooked through. Remove the beef from the skillet and set aside.
  3. Sauté the onions and garlic: In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the thinly sliced onion and cook for 4-5 minutes until softened and caramelized. Then add the minced garlic and cook for an additional 30 seconds until fragrant.
  4. Fry the eggs: Push the onions and garlic to one side of the skillet and pour in the beaten eggs. Scramble the eggs until fully cooked, then mix them with the onions.
  5. Add the rice: Add the 2 cups of cooked rice to the skillet, breaking up any clumps with a spatula. Stir to combine thoroughly with the eggs, onions, and garlic.
  6. Add sauces and vegetables: Stir in 2 tablespoons soy sauce, 1 teaspoon oyster sauce (if using), 1 teaspoon rice vinegar, and 1/4 teaspoon black pepper. If using, add the frozen peas and carrots and cook for another 2-3 minutes until heated through.
