  • 2 ¼ cups chicken broth
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme or Italian seasoning

Instructions

  1. Brown the sausage: In a large skillet or pot, heat olive oil over medium heat. Add the sliced smoked sausage and cook until browned on both sides to bring out its smoky flavor. Once browned, remove the sausage and set it aside.
  2. Sauté vegetables: Using the same pot, add diced onion and bell pepper. Cook for about 4–5 minutes until softened, then add the minced garlic and cook for another 30 seconds to release its aroma.
  3. Add and toast rice and spices: Stir in the uncooked long grain white rice, paprika, dried thyme or Italian seasoning, salt, and pepper. Toast the rice mixture for 1–2 minutes to enhance the flavors and slightly nutty taste.
  4. Simmer with broth and sausage: Pour in the chicken broth and return the browned sausage to the pot. Stir everything together and bring it to a boil. Once boiling, reduce the heat to low, cover, and let it simmer gently for 18–20 minutes until the rice is tender and the liquid is absorbed.
  5. Rest and garnish: Remove the pot from heat and let it sit, covered, for 5 minutes to allow the rice to finish steaming. Fluff the rice with a fork and garnish with chopped green onions or parsley if desired before serving.
