Description

A flavorful and easy one-pan recipe combining savory sausage, tender rice, and a sweet and tangy BBQ sauce. Perfect for a quick weeknight dinner, this dish features sautéed sausage and vegetables cooked with smoky spices and simmered in chicken broth and BBQ sauce for a comforting, hearty meal.

Ingredients

Scale

Sausage and Vegetables

  • 1 lb sausage (Italian or smoked), sliced into rounds
  • 1 small onion, diced
  • 1 bell pepper, diced (any color)
  • 2 cloves garlic, minced

Rice and Seasoning

  • 1 cup long-grain white rice
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • Salt, to taste

Liquids and Oil

  • 2 cups chicken broth
  • 1/2 cup BBQ sauce (your favorite brand or homemade)
  • 1 tablespoon olive oil

Garnish

  • Fresh parsley, chopped

Instructions

  1. Sear the sausage: Heat olive oil in a large skillet over medium-high heat. Add sausage slices and cook until browned and slightly crispy, about 5-7 minutes. Remove the sausage from the pan and set aside.
  2. Cook the vegetables: In the same skillet, add diced onion and bell pepper. Sauté for 3-4 minutes until they begin to soften. Add minced garlic and cook another minute until fragrant.
  3. Add the rice and spices: Stir in the rice, smoked paprika, black pepper, and salt. Toast the rice for 1-2 minutes to absorb the flavors.
  4. Simmer with liquids: Pour in chicken broth and BBQ sauce, stir to combine, and bring to a simmer.
  5. Cook the rice: Reduce heat to low, cover skillet, and cook for 15-20 minutes until rice is tender and liquid is absorbed. Add more broth if rice needs additional cooking time.
  6. Combine and finish: Return the sausage to the pan, stir everything together, and cook for an additional 2-3 minutes to heat through.
  7. Serve: Garnish with freshly chopped parsley and serve immediately.

Notes

  • You can use any type of sausage such as Italian, smoked, or even chorizo for a different flavor profile.
  • Adjust the BBQ sauce amount to your taste preference for sweetness and tanginess.
  • If you prefer a spicier dish, add some crushed red pepper flakes when cooking the vegetables.
  • For a gluten-free option, ensure your BBQ sauce is gluten-free.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated on the stovetop or microwave.
