Instructions
- Sear the sausage: Heat olive oil in a large skillet over medium-high heat. Add sausage slices and cook until browned and slightly crispy, about 5-7 minutes. Remove the sausage from the pan and set aside.
- Cook the vegetables: In the same skillet, add diced onion and bell pepper. Sauté for 3-4 minutes until they begin to soften. Add minced garlic and cook another minute until fragrant.
- Add the rice and spices: Stir in the rice, smoked paprika, black pepper, and salt. Toast the rice for 1-2 minutes to absorb the flavors.
- Simmer with liquids: Pour in chicken broth and BBQ sauce, stir to combine, and bring to a simmer.
- Cook the rice: Reduce heat to low, cover skillet, and cook for 15-20 minutes until rice is tender and liquid is absorbed. Add more broth if rice needs additional cooking time.
- Combine and finish: Return the sausage to the pan, stir everything together, and cook for an additional 2-3 minutes to heat through.
- Serve: Garnish with freshly chopped parsley and serve immediately.
