Ingredients
Scale
Wet Ingredients
- 1/2 cup unsalted butter
- 1/2 cup milk
- 1/2 cup creamy peanut butter
- 1 teaspoon vanilla extract
Dry Ingredients
- 2 cups granulated sugar
- 1/4 cup unsweetened cocoa powder
- 3 cups quick-cooking oats
- 1/4 teaspoon salt
Instructions
- Combine and Cook Base Mixture: In a large saucepan, combine the butter, granulated sugar, milk, and cocoa powder. Cook over medium heat, stirring constantly, until the mixture reaches a rolling boil.
- Boil Mixture: Continue boiling the mixture for 1 full minute to properly cook and thicken it, then remove from heat.
- Add Peanut Butter and Vanilla: Stir in the peanut butter and vanilla extract until the mixture is smooth and fully incorporated.
- Mix in Oats and Salt: Add the quick-cooking oats and salt to the chocolate mixture, stirring thoroughly until everything is evenly combined.
- Shape Cookies: Drop spoonfuls of the mixture onto wax paper or a lined baking sheet, shaping them into cookie-sized portions.
- Set and Cool: Allow the cookies to cool and set at room temperature for at least 30 minutes before serving to ensure they hold their shape and have a chewy texture.
Notes
- Use quick-cooking oats for the best texture; old-fashioned oats may alter the consistency.
- Ensure constant stirring during boiling to prevent the mixture from burning or sticking to the pan.
- Peanut butter should be creamy to blend smoothly; chunky peanut butter will affect texture.
- Cookies can be stored in an airtight container at room temperature for up to 5 days.
- For a nut-free version, substitute peanut butter with sunflower seed butter.
