- 1/2 cup unsalted butter
- 1/2 cup milk
- 1/2 cup creamy peanut butter
- 1 teaspoon vanilla extract
Dry Ingredients
- 2 cups granulated sugar
- 1/4 cup unsweetened cocoa powder
- 3 cups quick-cooking oats
- 1/4 teaspoon salt
Instructions
- Combine ingredients in saucepan: In a large saucepan, add the unsalted butter, granulated sugar, milk, and unsweetened cocoa powder.
- Boil mixture: Cook over medium heat, stirring constantly, until the mixture reaches a rolling boil.
- Boil for 1 minute: Maintain the boil for one minute to ensure proper cooking and sugar dissolving, then remove the saucepan from heat.
- Add peanut butter and vanilla: Stir in the peanut butter and vanilla extract until the mixture is smooth and fully combined.
- Mix in oats and salt: Add quick-cooking oats and salt to the chocolate mixture and stir well until everything is evenly incorporated.
- Form cookies: Drop spoonfuls of the mixture onto wax paper or a lined baking sheet to shape cookies.
- Set cookies: Let the cookies cool and set at room temperature for at least 30 minutes before serving.
Notes
- Use quick-cooking oats for best texture; old-fashioned oats may alter the cookie consistency.
- Ensure to boil the mixture for a full minute for the cookies to set properly.
- Store cookies in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
- You can substitute creamy peanut butter with other nut butters if preferred.
- Adding a pinch extra salt can enhance flavor if using unsalted peanut butter.
