Description

No-Bake Peanut Butter Buckeye Bars combine creamy peanut butter with a smooth chocolate topping, creating a rich, indulgent treat without the need for baking. These bars are perfect for quick preparation and satisfying sweet cravings with a classic peanut butter and chocolate flavor.

Ingredients

Scale

Peanut Butter Layer

  • 1 1/2 cups peanut butter
  • 1/2 cup unsalted butter, melted
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Chocolate Layer

  • 2 cups semi-sweet chocolate chips
  • 2 tbsp butter

Instructions

  1. Prepare the Peanut Butter Mixture: In a mixing bowl, combine peanut butter, melted butter, powdered sugar, and vanilla extract. Mix thoroughly until the mixture is smooth and well combined.
  2. Press Mixture into Dish: Line an 8×8-inch baking dish with parchment paper. Evenly press the peanut butter mixture into the bottom of the dish to form a compact layer.
  3. Melt Chocolate: Place the semi-sweet chocolate chips and 2 tablespoons of butter in a microwave-safe bowl. Heat in 30-second intervals, stirring between each, until the chocolate and butter are fully melted and smooth.
  4. Spread Chocolate Layer: Pour the melted chocolate evenly over the peanut butter layer, smoothing the top with a spatula to cover completely.
  5. Chill Until Firm: Refrigerate the assembled bars for about 1 hour or until the chocolate topping has set and is firm to the touch.
  6. Slice and Serve: Remove the bars from the dish using the parchment paper edges, slice into 16 bars, and serve chilled.

Notes

  • Use natural peanut butter for a more pronounced peanut flavor or creamy peanut butter for a smoother texture.
  • Ensure the butter used in the chocolate layer is unsalted to balance sweetness.
  • For easier slicing, warm the knife slightly before cutting the bars.
  • Store the bars in the refrigerator to maintain firmness.
  • Can be made a day ahead and kept refrigerated for up to 5 days.
