  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar (optional, for extra sweetness)
  • 1/2 cup whipped cream (or double cream)
  • 1/4 cup desiccated coconut (optional, for added texture)


Instructions

  1. Prepare the Biscuit Base: In a large bowl, crush the digestive biscuits into small pieces but not into fine crumbs. In another bowl, mix the melted butter and sweetened condensed milk together. Pour this liquid mixture over the crushed biscuits and stir thoroughly until the biscuits are fully coated.
  2. Press the Base into the Pan: Line an 8×8-inch square pan with parchment paper. Firmly press the biscuit mixture into the bottom of the pan to create an even, solid base. Place in the refrigerator to chill while preparing the filling.
  3. Make the Passion Fruit Filling: Using a large bowl, beat the softened cream cheese and powdered sugar (if using) until smooth and creamy. Add the fresh passion fruit pulp and beat again until everything is completely combined.
  4. Whip the Cream: In a separate clean bowl, whip the cream until stiff peaks form. Gently fold the whipped cream into the passion fruit and cream cheese mixture until the filling is light, fluffy and well incorporated.
  5. Assemble the Slice: Pour the passion fruit filling evenly over the chilled biscuit base. Use a spatula to smooth the surface evenly. If desired, sprinkle desiccated coconut on top for added texture.
