Biscuit Base
- 150 g Bourbon biscuits
- 45 g Unsalted butter, melted
Cheesecake Filling
- 300 g Soft cream cheese

- 60 g Caster sugar
- 2 tbsp Kirsch (optional, for a boozy twist)
Topping
- 410 g Black cherry fruit filling (tinned)
- 150 g Blackberries
- 125 g Blueberries
- Zest and juice of 1 lime
- 60 g Dark chocolate (for shavings or drizzle)
Instructions
- Prepare the Biscuit Base: Crush the Bourbon biscuits into fine crumbs using a food processor or by sealing them in a ziplock bag and rolling with a pin. Combine the crumbs with the melted butter until well mixed. Press the mixture firmly into the bottom of a tart or springform pan, smoothing the top with a spoon. Chill in the fridge for 30 minutes to set.
- Whip Up the Cheesecake Filling: In a large bowl, beat the cream cheese and caster sugar until smooth and lump-free. Gradually whisk in the double cream until thickened and fully combined. Stir in the Kirsch if using. Spread the filling evenly over the chilled biscuit base and smooth the top. Refrigerate for at least 4 hours or overnight to allow it to set completely.
- Prepare the Topping: In a bowl, gently combine the black cherry fruit filling with fresh blackberries and blueberries. Add the lime zest and juice to give a fresh tang. Once the cheesecake is firmly set, spread the berry mixture evenly over the top.
