Instructions
- Prepare the batter: In a large bowl, combine the fresh corn kernels, all-purpose flour, cornmeal, chopped cilantro, chopped green onions, shredded cheddar cheese, ground cumin, paprika, optional cayenne pepper, eggs, salt, and pepper. Mix thoroughly until all ingredients are well incorporated and form a thick batter.
- Heat the oil: Pour vegetable oil into a large skillet to about 1/2-inch depth and heat it over medium heat until hot but not smoking, suitable for frying.
- Form and fry fritters: Using a spoon, scoop individual portions of the corn batter into the hot oil. Flatten each scoop slightly with a spatula to form fritters of even thickness.
- Cook fritters: Fry each fritter for approximately 3-4 minutes on one side until golden brown and crispy. Carefully flip and fry the other side for an additional 3-4 minutes until equally golden.
