- 2 cans (15 oz each) white beans (such as cannellini or Great Northern), drained and rinsed
- 4 cups fresh greens (such as spinach, kale, or Swiss chard), roughly chopped
Seasonings and Garnish
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon red pepper flakes (optional)
- 1 lemon, zested and juiced
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- 1/4 cup crumbled feta cheese (optional, for garnish)
Instructions
- Sauté Garlic and Greens: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Cook Greens: Add the chopped greens to the skillet and cook for 3-5 minutes, stirring occasionally, until the greens are wilted and tender.
- Add Beans and Seasonings: Stir in the drained white beans, dried oregano, red pepper flakes if using, salt, and pepper to taste.
- Heat Through: Cook the mixture for another 3-4 minutes, allowing the beans to warm through and absorb the flavors.
- Add Lemon and Adjust Flavors: Remove the skillet from heat. Stir in the lemon zest and lemon juice. Taste and adjust seasoning with additional salt, pepper, or lemon juice as desired.
- Serve and Garnish: Transfer the dish to a serving platter. Garnish with chopped fresh parsley and crumbled feta cheese if desired.
