- 2 tablespoons Red wine vinegar
- 1 tablespoon Dijon mustard (Optional)
- 1 clove Garlic (Minced)

Instructions
- Prepare Potatoes: Start by washing and cutting your Yukon Gold or red potatoes into uniform pieces. Boil them in salted water for about 15-20 minutes until tender. Drain the potatoes and allow them to cool completely.
- Make Dressing: In a bowl, whisk together high-quality extra virgin olive oil, fresh lemon juice, red wine vinegar, Dijon mustard if using, and minced garlic. Season the dressing with salt and pepper to taste.
- Combine Ingredients: In a large mixing bowl, gently fold the cooled potatoes together with Kalamata and green olives, crumbled feta cheese, fresh parsley, and fresh dill until well combined.
- Add Dressing: Drizzle the dressing over the potato mixture and gently toss to ensure that all the ingredients are evenly coated and glistening with the dressing.
- Serve or Chill: This salad can be served immediately for warm, fresh flavors, or chilled in the refrigerator for 30 minutes to allow the flavors to meld. Either way, it is delightfully refreshing and perfect for your picnic table.
Notes
- Boiling the potatoes until just tender ensures a creamy texture without falling apart.
- Dijon mustard in the dressing adds a subtle tang but can be omitted for a milder flavor.
- Chilling the salad enhances the flavors and melds the ingredients nicely.
- Use fresh herbs for the best flavor and aroma.
- Adjust salt and pepper according to taste, especially since feta and olives can add saltiness.
