Description

Mediterranean Baked Feta Eggs is a delicious and easy-to-make breakfast or brunch dish featuring creamy baked feta cheese, bursting cherry tomatoes, fresh spinach, and perfectly baked eggs, all infused with garlic, oregano, and olive oil for a flavorful Mediterranean flair.

Ingredients

Scale

Cheese and Vegetables

  • 1 block feta cheese (7–8 ounces)
  • 2 cups cherry or grape tomatoes
  • 1 cup chopped fresh spinach
  • 2 cloves garlic, minced

Seasonings and Oils

  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • Freshly ground black pepper to taste
  • Salt to taste

Eggs and Garnish

  • 4 large eggs
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat Oven: Preheat the oven to 400°F (200°C) to prepare for baking the dish evenly.
  2. Arrange Feta and Veggies: Place the block of feta in the center of a small baking dish. Scatter the cherry tomatoes and chopped spinach around the feta to create a balanced base.
  3. Season and Drizzle Oil: Sprinkle minced garlic over the tomatoes and spinach. Drizzle 2 tablespoons of olive oil over everything, then season with dried oregano, red pepper flakes, and freshly ground black pepper to infuse Mediterranean flavors.
  4. Bake Feta and Veggies: Bake the dish for about 20 minutes or until the tomatoes burst and the feta softens and turns slightly golden, creating a rich and creamy texture.
  5. Gently Stir Mixture: Remove from the oven and carefully stir the tomatoes and spinach slightly around the feta without breaking up the cheese completely, keeping it in creamy pockets.
  6. Create Egg Wells: Make four small wells in the mixture to prepare for cracking in the eggs.
  7. Add and Bake Eggs: Crack one egg into each well. Return the dish to the oven and bake for an additional 8 to 10 minutes, or until the egg whites are fully set and the yolks reach your desired level of doneness.
  8. Finish and Serve: Remove from the oven, season with a small pinch of salt if needed, garnish with fresh basil or parsley if desired, and serve the dish warm for the best flavor experience.

Notes

  • You can adjust the red pepper flakes according to your preferred spice level.
  • Use fresh herbs like basil or parsley to enhance the flavors and add a fresh touch.
  • For creamier yolks, bake the eggs for less time; for firmer yolks, bake longer.
  • This dish pairs well with crusty bread or a light salad for a complete meal.
