Mashed Potato Mixture

  • 2 cups cold mashed potatoes
  • 2 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped green onions
  • 1/4 cup sour cream
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Preheat and Prepare: Preheat your oven to 400°F (200°C) and grease a mini muffin tin with butter or nonstick spray to prevent sticking.
  2. Mix Ingredients: In a large bowl, combine the cold mashed potatoes, eggs, shredded cheddar cheese, grated Parmesan, chopped green onions, sour cream, garlic powder, salt, and black pepper. Mix thoroughly until the ingredients are well combined and smooth.
  3. Fill Muffin Tin: Spoon the mixture into the prepared muffin tin cups, filling each one almost to the top for a nice puff.
