Ingredients
Scale
For the Salmon
- 4 salmon fillets (6 oz each)
- Salt and pepper, to taste
- 2 tablespoons olive oil
For the Sauce
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated parmesan cheese
- 1/4 cup sun-dried tomatoes, chopped
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Season the Salmon: Season the salmon fillets with salt and pepper evenly on both sides to enhance the natural flavor of the fish.
- Sear the Salmon: Heat the olive oil in a large skillet over medium heat. Place salmon skin-side down and cook for 4-5 minutes until golden brown, then flip and sear the other side for 4-5 minutes. Once cooked, remove the salmon from the skillet and set aside.
- Sauté Garlic: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Deglaze the Pan: Pour in the chicken broth and use a spatula or spoon to scrape and lift any browned bits from the bottom of the skillet. Let it simmer for 2-3 minutes to reduce slightly.
- Create the Sauce: Stir in the heavy cream, grated parmesan cheese, chopped sun-dried tomatoes, Italian seasoning, and optional red pepper flakes. Allow the sauce to simmer for 3-4 minutes until it thickens and becomes creamy.
- Return Salmon to Sauce: Place the seared salmon fillets back into the skillet. Spoon the sauce generously over the top and let it simmer for another 2-3 minutes to heat everything through and infuse the salmon with flavor.
- Garnish and Serve: Sprinkle fresh chopped parsley over the top for a burst of color and freshness. Serve immediately alongside your favorite side dishes for a complete meal.
Notes
- Ensure the skillet is hot before searing the salmon to get a nice golden crust.
- The red pepper flakes add a mild heat; you can omit if you prefer a milder sauce.
- Sun-dried tomatoes packed in oil can be drained before chopping for a less oily texture.
- Use a heavy skillet like cast iron or stainless steel for best searing results.
- Pair this dish with steamed vegetables, mashed potatoes, or a light salad for a balanced meal.
